Straus Family Creamery Organic Barista ® Milk - Now Steaming in all Café Locations

With great pride and excitement, we are announcing our newest collaboration and partnership today. Straus Family Creamery’s Barista Milk will from now on, be served in all five café locations for those who prefer cow milk. 


 

Why Straus Family Creamery?

The decision to transition to Straus Milk was an easy one to make for two simple reasons: First, it is hands-down the best-tasting, best-foaming, most delicious cow milk out there, plus it’s certified organic. And second, we couldn’t be more aligned with Straus Family Creamery’s mission and commitment to collaborative farmer relationships and innovative sustainable, organic farming practices to protect our land and the future.


A few weeks ago, Chief Retail Officer and Master Barista, Cruz Conrad, and  Co-Founder, Thaleon Tremain, had a chance to sit down with Founder, Albert Straus (right to left), at our Midtown Café for an animated conversation over cappuccinos and affogatos. Yes, they make delicious ice cream too.

We learned that Founder Albert Straus will be implementing the final piece of his  carbon-neutral dairy farming model in the near future with a dramatic climate change solution at the Straus Dairy Farm, which was the first certified organic dairy west of the Mississippi River. By adding a specific red seaweed supplement to the cow’s diet, the dairy cow’s enteric methane emissions have the potential to be  reduced by up to 95%. The Straus Dairy Farm is the first organic dairy farm committed to using the certified organic red seaweed supplement when it becomes available at scale. Upon completion of the model, Straus Dairy Farm’s organic milk will have a climate-positive footprint, similar to non-dairy, plant-based alternatives and a lower climate impact than soymilk. All twelve Straus milk supplier farms, located in Marin and Sonoma Counties, California, are on track to adopt this model and become carbon neutral by 2030. 

 

Straus Family Creamery’s regenerative carbon farming practices also include the promotion of soil health, restoring woodlands and streams, and mitigating climate change through carbon sequestration as outlined in an aggressive carbon farm plan in collaboration with the Marin Carbon Project.

Only the Finest Milk for Pachamama Coffee

Straus Family Creamery Organic Barista Milk is pure and has absolutely nothing added. It was specifically developed with the help of baristas to support the craft of coffee making. It produces a microfoam with dense bubbles that are consistently stable and have a velvety mouthfeel. Pachamama Coffee’s Chief of Retail, Cruz Conrad, is the guiding hand behind our cafés’ operations. He feels strongly about only pairing the highest quality ingredients with Pachamama coffee.
