Clever by Nature - Our New Single-Origin Half-Caff Coffee from México

In the hills around Huatusco, México, coffee grows in rich volcanic soil under a canopy of shade. It’s a region with a long history of organic coffee farming, where smallholder farmers work in step with the land and the seasons. Their coffee is naturally balanced and full of character.

Our new Half-Caff coffee stays true to this place, with both the caffeinated and decaffeinated coffee portions coming from the same region. We chose to make a single-origin, medium roast Half-Caff, because it makes for a beautiful, cohesive, grounded cup of coffee.

How is Half Caff Coffee Made?

We use the Mountain Water Process to decaffeinate this coffee, a method designed to preserve the coffee’s natural flavor. The beans are immersed in locally sourced mountain water from México, which gently draws out the caffeine along with the coffee’s soluble elements. The caffeine is then filtered out of the water using a chemical-free process, and the beans are reintroduced to the same coffee-infused water to reabsorb their original flavor compounds.

Combined with the fully caffeinated coffee, we created a medium roast that is smooth, and approachable. We taste notes of honey, almond, and chocolate—familiar, comforting flavors that come through without being overpowering and that resonate with a wide range of palates.

Our label features a fox, an animal native to many parts of México. Foxes are known for being smart, adaptable, and a little bit playful. They’re alert and focused, but not frantic. They move with purpose, but they don’t rush. That’s the spirit of this coffee.
