GREEN COFFEE FAQ
Frequently Asked Questions About Green Coffee
Green coffee refers to unroasted coffee beans, harvested from coffee cherries and processed to remove the outer layers. Before roasting, these beans are dense, greenish in color, and full of the natural tasting notes and characteristics unique to their origin.
At Pachamama, we offer direct trade specialty green coffee beans sourced from the five farmer-owned cooperatives that collectively own Pachamama Coffee. Our single-origin coffees from Ethiopia, Perú, México, Nicaragua and Guatemala are ideal for home roasters looking to roast their own coffee or small-batch roasters buying green coffee beans in bulk. Pachamama beans are regeneratively grown and certified organic, resulting in exceptional coffee with rich tasting profiles.
The farmers who grow the coffee own Pachamama, and they sell through the cooperatives they belong to: COCLA in Perú, PRODECOOP in Nicaragua, Manos Campesinas in Guatemala, La Unión Regional in México and Oromia CFCU in Ethiopia. There is no exporter or trader in between. The farmer-owners select the lots, and the price paid per pound is listed on each product page.
Coffee bought straight from the producer rather than on the open commodity market. Pachamama goes a step further: the producers are the owners, they set their own price, and the profit from every sale returns to their cooperatives.
Cool, dry and out of direct light. Keep the beans in a breathable bag or a sealed container in a stable room-temperature spot, away from humidity and strong smells. Avoid the refrigerator or freezer, where condensation can damage the beans.
Stored well, green coffee holds its quality for 6 to 12 months, far longer than roasted coffee, which is best within a few weeks of roasting. Roast in small batches and the beans stay fresh until you need them.
Green and roasted beans carry about the same caffeine. Roasting changes the weight and volume of the bean more than it changes the caffeine, so a cup brewed from your own roast will be in the same range as ours. The México Decaf is processed with the Mountain Water method at origin to remove caffeine.
Yes, green coffee beans from Pachamama coffee farmers are available to home roasters, cafés, grocers and universities that want to roast Pachamama’s coffee in-house. Email wholesale@pachamamacoffee.com or call (916) 960-3564 to request more information.
An air popcorn popper or a heavy cast iron skillet on the stovetop are two of the easiest ways to start. Roast about half a cup of green coffee beans at a time in a well-ventilated spot, stirring constantly if you use a skillet so the beans roast evenly. Listen for the first crack, which sounds like popcorn popping. Stop soon after it for a light roast, or keep going for a darker roast. Cool the beans right away, then let them rest a day before brewing. For a step-by-step method, see America’s Test Kitchen’s guide to roasting coffee in a popcorn popper.
