The Chemex produces a clean, refined cup with exceptional clarity. Its thicker paper filter removes more oils and sediment, allowing the subtle characteristics of each coffee to come through with precision.
What You’ll Need
- Chemex brewer
- Chemex paper filter
- Freshly ground coffee
- Water Kettle
- Scale (recommended)
Coffee to Water Ratio
We recommend a 1:16 ratio. 1 gram of coffee per 16ml of water, or if you don't have a scale, use 2tbsp of coffee for every cup of water.
Example ratio for a 6-cup Chemex:
- 45g coffee
- 720g water
This ratio highlights balance and clarity in the cup.
Grind Size
Use a medium-coarse grind, slightly coarser than standard pour over.
This helps maintain a steady flow rate through the thicker filter.
Water Temperature
Heat water to about 200°F (just off boil).
Step-by-Step Instructions to Brew a Chemex Pour-Over
1. Prepare the Filter
Place the Chemex filter in the brewer with the thicker side facing the spout. Rinse thoroughly with hot water to remove any paper taste and warm the vessel. Discard the rinse water.
2. Add Coffee
Add your ground coffee to the filter and gently shake to level the bed.
3. Bloom
Start your timer and pour just enough water to saturate the grounds, about 2–3 times the weight of the coffee. Let it bloom for 30–45 seconds as the coffee releases gas.
4. Continue Pouring
Pour slowly in a controlled, circular motion, keeping the water level steady. Pour in stages, allowing the water to draw down slightly between pours.
5. Finish the Brew
Total brew time should be 4:30–5:30 minutes. Once the water has fully drained, remove the filter.
Final Touch
Give the Chemex a gentle swirl before serving to integrate the cup. Wait about 30 seconds before drinking for the best temperature and flavor.
